Barbecued Pot Roast Recipe

Barbecued Pot Roast1 (4 pound) beef roast 2 tablespoons fat Salt and pepper 1 (8 ounce) can tomato sauce 3 medium onions, sliced 2 cloves garlic, minced 2 tablespoons brown sugar ½ teaspoon dry mustard ¼ cup lemon juice ¼ cup vinegar ¼ cup catsup 1 tablespoon Worcestershire sauce Dash of hot pepper sauce Brown meat in fat. Sprinkle with salt and pepper. Add 1 cup water, tomato sauce, onion and garlic. Cover and simmer 2 hours. Add remaining ingredients, cover and continue cooking 1 ½ hours longer, or until tender, adding more water if necessary. Remove meat and skim off excess fat from gravy.
